Murukkus, a crunchy spiral snack from South India shaped by hand or through a hand-turned press, might be a forerunner of today's extruded food industry and offer potential novel format. This contrasts with ready-to-eat cereal extrusion where high-speed extrusion struggles with fiber, leaving only the starchiest grain parts and requiring vitamins to be added back. Murukkus are very versatile, some are made with maize with flavors like Italian herb or spring onion, spinach paste makes for green murukkus while beetroot makes bright red ones.
